Why the pages use ranges
Two ovens with similar outside dimensions can have different chamber layouts, bake times, recovery characteristics and rated output. These guides identify the equipment class worth investigating; they do not replace model-specific data.
How to choose the right band
Use the number of pizzas that must leave the oven during your busiest repeatable hour, not the number ordered over the whole day. If orders arrive in compressed waves, also look at the busiest 15-minute block and use it as a stress test.

Exact thresholds are intentionally fuzzy
Real oven classes overlap. A strong stacked deck can exceed a small conveyor; a large hearth can deliver very high output with skilled operators. Treat the pages below as shopping shortlists, then verify actual models using your pizza diameter, bake profile and utility constraints.
