Two hundred pizzas in the busiest hour is a commissary, large delivery hub, stadium or very high-volume pizzeria problem. The safest planning approach is parallel production with intentional redundancy rather than trying to push one oven to its theoretical limit.
Think in lanes and failure modes
A 240-pizza-per-hour planning target is about four finished pizzas per minute. Multiple belts, ovens or hearths let the operation keep moving if one lane slows, needs service or runs a different product.
The building becomes part of the equipment decision
Electrical capacity, gas supply, exhaust, make-up air, fire protection, clearances and heat rejection can all constrain the final configuration. These should be evaluated before equipment is ordered, not after delivery.
Production balance matters
At this scale, a bottleneck in dough handling, proofing, topping, cutting, boxing or dispatch can erase the value of extra oven capacity. Model the entire line at the target rate.
Use manufacturer-specific engineering data
A website estimator can identify the class of system to investigate, but a 200-per-hour operation should be validated with actual manufacturer data and qualified kitchen-design, fire, gas and electrical professionals.
What to ask before ordering
Ask for output at your actual pizza diameter, normal bake time and realistic loading pattern. Confirm chamber or belt dimensions, utility load, ventilation listing, service clearance and local installation requirements. Treat any generic “up to” number as a starting point, not a guarantee.

Separate required capacity from redundancy
Do not count backup capacity twice. First define the output needed to survive the peak. Then decide how much of that output should remain available if one belt, chamber or oven is unavailable. A high-volume system with no failure plan may be cheaper on paper but fragile in service.
