How many pizzas per hour can a commercial pizza oven make?

There is no single universal number. Compact commercial ovens may be in the low tens per hour, full deck systems often span tens of pizzas per hour, and larger conveyor or multi-oven systems can exceed 100 per hour. Actual output depends on pizza size, bake time, chamber or belt dimensions, heat recovery and operator workflow.

Should I size from daily pizza sales?

No. Size from the busiest realistic service period. A daily average can make a kitchen look comfortable even when the oven becomes the Friday-night bottleneck.

Does a conveyor always have more capacity than a deck oven?

No. Small conveyors can overlap with full-size deck systems, while stacked decks can reach high output. Conveyor ovens mainly change the workflow: continuous movement and repeatability versus batch control.
