Deck vs Conveyor Pizza Oven: Which Fits Your Throughput?

Deck and conveyor ovens can overlap in hourly output, so “which is faster?” is the wrong first question. The better question is which workflow reliably produces your pizza at your peak demand.
Deck oven strengths
Deck ovens provide direct control over placement, rotation and bake. They suit operators who value crust character, flexible bake profiles and batch management. Stacking multiple decks increases output while preserving that workflow.
Conveyor strengths
Conveyors standardize time through the bake chamber. They can reduce operator timing decisions and work well when repeatability, delivery volume and continuous flow dominate the concept.
Throughput crossover
There is no clean dividing line. A compact conveyor can sit in the same capacity range as a strong single- or double-deck system. Once peak demand rises into sustained high-volume service, continuous flow often becomes more attractive—but the product and labor model still decide the winner.

Compare the same service scenario
Ask both suppliers to size against the same pizza diameter, bake target and peak-hour number. Otherwise the comparison becomes misleading: a generous stacked deck can outperform a small conveyor, while a large conveyor can exceed a single-deck system by a wide margin.
